Doi Chaang Wild Civet Coffee: From Civet to Cup
Doi Chaang Wild Civet Coffee is made from the spat or eliminated coffee beans of wild civets that freely roam through the natural habitant of Doi Chang Village. Located within the mountains of Northern Thailand, Doi Chang village is one of the premium coffee growing regions of the world. High altitudes and ample rainfall combine with old forest growth and fresh flowing spring water to create rich, fertile soil. Under the shade of various fruit and nut trees, 100% organic, premium Arabica coffee plants are carefully cultivated to produce a complex, dense bean that is mild, yet fruity and aromatic.
The wild civets (Kopi Luwak) will feast on only the ripest and sweetest coffee cherries when the fruit is at its peak ensuring only the best coffee beans have been ingested. The farmers of Doi Chang Village gather the spat or passed civet coffee beans from the forest floor, flush the coffee beans from the remaining layers of fruit, sun dry and hand select only the finest wild civet coffee beans. The beans are sent directly from Doi Chang Village to Calgary, Alberta where Doi Chaang Coffee's expert Roastmaster roasts the civet coffee in micro-lot batches to ensure the perfect taste profiles for both the spat and passed Doi Chaang Wild Civet Coffee.
